extracted from the
fresh Alaskan Pollock all over the
world.
How it is
processed:
Pollock roe is considered a delicacy in Japan and is also widely
used in Korea. The
roe is extracted from the fish after heading.
Workers sort the roe from the other viscera. It is gently spray washed and sorted by a well trained crew.
In the sorting process the roe is graded according to
strict specifications. The
roe is packed into a waxed fiber liner and quickly frozen in
contact plate freezers.
